Cinco-de-mayo-pinata-cookiesI think that these are about the most clever and ingenious cookies ever! I found this idea on She Knows and these crazy awesome cookies are made by Sandra Denneler, who has a blog called Project Denneler. Click here to see a slideshow of all the steps to make the cookies and here for the recipe. I love all things Mexican and pinatas are no exception. This idea of a stacked cookie with treats inside when you break them open is just fantastic. It looks like it takes some time to make them, but none of the steps are too difficult.

The striped dough is made by pressing layers of dough into a loaf pan.

These are the three cookies before assembled. See the space for the tiny candies to go?

I love how they can stand up!

Broken open and ready to eat the treats inside!
