With St. Patrick’s Day tomorrow, I thought I’d share a fast and easy treat for the kids that shouldn’t take much time at all, but they still turn out very pretty. These four leaf clover cupcakes from Parents magazine are made with any flavor cupcake and vanilla frosting that is tinted yellow. Then you just have to flatten spearmint leaf gumdrops and cut out the heart shapes to make a clover. The stems are made from the scraps!
1 can (16 ounces) vanilla frosting
96 green candy spearmint leaves
Yellow icing color
Tint frosting yellow. Frost cupcakes. Roll out leaves on sugared surface. Using a 1-inch heart-shaped cookie cutter, cut out 96 hearts. Arrange 4 hearts on each cupcake for clover. Make stems from candy scraps.
