Here’s a quick and fun Winter dessert — an ice cream snowman. Two scoops of ice cream make up the body of the snowman, and he also has a candy cane walking stick, licorice or fruit roll up scarf, and a peppermint patty hat with a peanut butter cup on top. Chocolate chips make his little buttons and eyes. You can also make faux snow with coconut or white chocolate shavings for him to sit on. The recipe used eggnog ice cream, but I would probably use a white ice cream to be more snowman-like?
Egg Nog Snowman
Eggnog Ice Cream
12 small candy canes
Cake decorating candies or mini chocolate chips
12 licorice gumdrops or small peanut butter cups
12 peppermint patties
Shredded, toasted coconut or white chocolate shavings
Place a large scoop of ice cream on a dessert plate, then place a smaller scoop on top.
Lean a small candy cane against the lower scoop, pressing firmly into ice cream (like a walking cane).
Use cake decorating candies or mini chocolate chips for eyes, mouth and buttons and decorate like a snowman.
Place a peppermint patty on top of scoop and place gumdrop or peanut butter cup askew on top of the patty like a top hat.
Scatter shredded coconut or white chocolate shavings lightly around and on top of each snowman and serve.
